The farm “Il Casale” is owned by the family Daviddi, who have been producing Vino Nobile di Montepulciano since the early 19th century, in the territory of Valiano. Currently, the production stands at about 80,000 bottles per year, as a result of the cultivation of about 20 hectares of vineyards, mostly planted with Sangiovese, and with small amounts of Canaiolo Nero and Mammolo. The soil, mostly clayey and stony, is highly suitable for producing a pleasant and tasty wine. Besides, the production areas of Gracciano, Abbadia di Montepulciano and Valiano are cultivated with Malvasia, Trebbiano and Grechetto, essential for the production of the local high-quality Vin Santo. The vineyards, consisting of about 4000 plants per hectare, are trained mainly by the guyot system, while the remainder is trained by the spurred cordon system, facing south-southwest, at an average altitude of 360 meters above sea level. Noteworthy is also the production of extra virgin olive oil, in the typical local varieties (Leccino, Frantoio and Moraiolo), hand-picked in November, and cold-extracted within 24 hours of collection.
