Pici with a rabbit sauce

INGREDIENTS (for 6 people)

Pici
• 1kg of 00 flour
• A pinch of salt
• 1 glass of water
• 2 tablespoons of oil

Sauce
• ½ a rabbit
• 300 grams of minced beef
• 1 onion, 1 celery, a pinch of fennel, garlic
• ½ kg of mature tomatoes
• oil, salt and pepper

PREPARATION

Prepare a well with the flour and pour the water, oil and sale into it. Kneed quickly to obtain a smooth, soft ball, leave the dough aside for half an hour. Roll out the ball into a sheet, around 1cm thick, cut and hang it by hand. Put into a pan the oil, salt and pepper and the chopped celery, onion and a little of the minced meat. Let it brown over a high flame, add a glass of red wine and once it has evaporated add the tomatoes that have been cut in chunks. Let it cook for around 1½ hours.
